Easy Baked Chicken Meatballs with Lemon Garlic Sauce

These chicken meatballs are baked to perfection and smothered in an easy to make lemon garlicky white wine cream sauce. Bursting with fresh and delicious flavors, these delicious chicken meatballs make an easy busy weeknight dinner or meal prep option.

Ingredients

for the meatballs

  • lb ground chicken
  • 2 garlic cloves minced
  • ¼ fresh parsley finely chopped
  • zest of ½ lemon
  • ¼ cup grated parmesan
  • ½ cup seasoned panko bread crumbs
  • 1 egg
  • 1 tsp onion powder
  • salt and pepper to taste

for the white wine sauce

  • 1 tbsp olive oil
  • 3 garlic cloves minced
  • 1 tbsp arrowroot powder or flour
  • 1 cup white wine or chicken broth
  • ¼ cup chicken stock
  • Juice from ½ lemon
  • 1 tbsp Greek yogurt

Instructions

  1. Preheat oven to 425 degrees
  2. Combine all ingredients in a bowl and mix gently. Use a cookie scoop or tablespoon to roll into 1.5-inch balls and place on a lightly oiled baking sheet.
  3. Cook for 18-20 minutes until nicely browned, flipping halfway. 
  4. Heat olive oil over high heat. Add the minced garlic and sauté for 1-2 seconds; add in the arrowroot powder or flour and mix well to coat the garlic. Add in the white wine, chicken stock and lemon juice; stir until the mixture is smooth.
  5. Add the Greek yogurt and season with salt and pepper to taste; stir well and let simmer for an additional 5 minutes. 
  6. Pour sauce over meatballs and serve with pasta and green beans if using.
