Instructions
- Make shredded beef - click the link up above for the recipe.
- Make salsa - click the link up above for the recipe.
- Make the guacamole - click the link up above for the recipe.
- Preheat the oven to 400 degrees on a convection setting if you have it. Line a baking sheet with tin foil then place two metal cooling racks on the baking sheet then coat with cooking spray. Side Note: I bake my taquitos on the racks so any juices drip down onto the tin foil instead of making all of the taquitos soggy.
- Wrap corn tortillas in damp paper towels for 1 minute in the microwave to soften. Heat the meat until warm in the microwave for about 45 seconds.
- Place a small spoonful of refried beans down the center of the tortilla, sprinkle the beans with a bit of extra sharp cheddar, then add shredded beef on top of the cheese.
- Roll the tortilla tightly. Place seam side down, on the prepared baking sheet that’s been coated with cooking spray.
- Finish rolling the rest of the taquitos, then spray each of them with cooking spray and bake for 15-20 minutes or until crispy and golden brown. Side Note: If you don't have a convection setting on your oven, use the regular setting and flip the taquitos over halfway through the cooking time.
