Ingredients

  • 1 banana ripe and mashed
  • 1/4 Teaspoon baking powder
  • 1 egg
  • 1/2 Teaspoon vanilla extract pure
  • 1 Tablespoon butter melted
  • 1 Tablespoon sour cream
  • 1 Tablespoon sugar
  • 1 Tablespoon brown sugar
  • 3 Tablespoons flour
  • salt pinch
  • cooking spray
  • 1 Tablespoon walnuts chopped (optional)
  • whipped topping optional, for garnish

Instructions

  1. In a bowl, mix the bananas, eggs, vanilla, butter and sour cream
  2. Slowly add the dry ingredients: flour, sugars, salt and cooking spray. Mix until combined
  3. Add the walnuts
  4. Spray a tall mug with cooking spray. Pour the batter in
  5. Microwave on high for 2 to 3 minutes. Mine took about 2 minutes and 40 seconds
  6. Carefully remove from microwave and invert on a plate. Top with whipped topping, whipped cream or ice cream if desired
