The Banana Cake:

  • 2 1/2 cups whole wheat flour
  • 1 1/4 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 3 very ripe bananas mashed
  • 3/4 cup coconut sugar
  • 1/2 cup unsweetened applesauce
  • 4 large eggs lightly whisked
  • 1/4 cup Greek yogurt
  • 1 tsp pure vanilla extract

The Chocolate Frosting:

  • 1/2 cup unsalted butter melted
  • 3 cups powdered sugar sifted
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup almond milk
  • 1 tsp pure vanilla extract

Instructions

Banana Cake:

  1. Preheat your oven to 350°F. Grease a 9x9-inch baking pan with a little coconut oil and dust with flour to prevent sticking.
  2. In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, and sea salt.
  3. In another bowl, mash the bananas until smooth. Stir in the coconut sugar, applesauce, eggs, Greek yogurt, and vanilla extract until well combined.
  4. Gently fold the banana mixture into the dry ingredients, just until incorporated.
  5. Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 30-35 minutes. Let the cake cool completely in the pan on a wire rack.

Chocolate Frosting:

  1. In a medium bowl, whisk the melted butter with the cocoa powder until smooth.
  2. Gradually add the powdered sugar, alternating with the almond milk, and beat until you reach a spreadable consistency. Add the vanilla extract and mix well.
  3. Once the cake is cool, spread the frosting evenly over the top. Slice and serve!
