Basil Pistachio Pesto

Ingredients

  • 2 cups fresh basil
  • ½ cup parmigiano reggiano (grated)
  • ½ cup extra virgin olive oil
  • ¼ cup shelled pistachios
  • 2 cloves garlic
  • 1 juice and zest of lemon
  • salt and pepper (to taste)

Instructions

  1. Place the first seven ingredients in a high speed food processor and pulse a couple times to start breaking down the pesto.
  2. With the processor on high speed, slowly drizzle in the olive oil. Puree until smooth and creamy.
  3. Check for seasoning and adjust accordingly.
