Ingredients

Servings
  • 4 cups water 1 liter
  • 2 tablespoon sugar (optional) or honey or other sweetener
  • 1 inch ginger peeled and cut into five slices, piece
  • 3 tablespoons berry tea or 3 tea bags; I used We Are Tea Super Berry, loose
  • lemon juice of 1

To serve

  • 10 raspberry
  • 10 blueberries
  • 5 strawberries halved
  • 15 mint leaves
  • ½ lemon thinly sliced
  • ice cubes

Instructions

  1. Bring the water to a boil, add the sugar and ginger and stir until the sugar dissolves.
  2. Remove from the heat, add the tea and allow to steep for 5 minutes.
  3. Strain out the leaves and ginger over a bowl and allow the liquid to cool and stir in the lemon juice.
  4. Taste for sweetness. If you’d like it sweeter, dissolve a little sugar in hot water and add to the tea. If you’d like it more tart, add a little more lemon juice.
  5. Add the ice to a large jug or into glasses, along with the fruit and mint leaves lightly crushed to release their flavour. Pour in the cooled tea and serve chilled.
