Spiced Poached Pear Cocktail with Rosemary

This cocktail pairs vodka and Lillet blanc with a homemade spiced pear syrup made by simmering ripe pears with white wine, sugar, cinnamon, star anise, and lemon zest. Shaken with lemon juice and garnished with rosemary, the drink combines fruity sweetness, citrus brightness, and aromatic spice, resulting in a balanced and refreshing cocktail with herbal notes.

Description

The Spiced Poached Pear Cocktail is built around a syrup prepared by gently cooking chopped ripe pears with sugar, white wine, cinnamon, star anise, and lemon zest until tender and syrupy. The syrup is strained to remove solids, preserving clarity and brightness. For the cocktail, vodka, Lillet blanc, lemon juice, and the chilled pear syrup are combined in a shaker with ice and vigorously shaken to blend the flavors and chill the drink.

Served in cocktail glasses, the drinks are garnished with fresh rosemary sprigs twisted to release their oils, imparting herbal aroma. The cocktail balances the pear’s natural sweetness and spice with lemon’s acidity and the smoothness of vodka and Lillet, making it a nuanced and elegant drink suitable for special occasions.

Ingredients

Servings

For 2 cocktails:

  • 4 oz vodka
  • 1 1/2 oz Lillet blanc
  • 2-3 oz pear syrup depending on how sweet you like your drinks
  • 1 1/2 oz lemon juice
  • 2 prigs rosemary fresh

For the Spiced Pear Syrup:

  • 2 pear ripe) or other sweet variety, chopped into 1 inch pieces (no need to peel, Comice, large
  • 1 cup water
  • 1/2 cup white wine
  • 1 cup sugar
  • 1 tick cinnamon
  • 1 pod star anise
  • 1 trip lemon 3-inch), peeled with a vegetable peeler, zest

Instructions

Make the syrup:

  1. In a small sauce pan combine water, wine, sugar, cinnamon, star anise and lemon zest. Bring to a boil over medium-high heat then reduce to a simmer. Add the chopped pears and cook until pears are soft and the liquid becomes syrupy, about 30 minutes.
  2. Remove from heat and strain through a fine mesh sieve into a clean glass jar. Don’t press the pears or the syrup will become cloudy. Discard the solids and chill syrup until ready to use.

Make 2 cocktails:

  1. In a cocktail shaker filled with ice, combine vodka, Lillet, lemon juice and pear syrup. Shake vigorously for 15-20 seconds.
  2. Strain into 2 cocktail glasses. Twist the rosemary sprigs a few times to release the oils and garnish each glass.
