  • 3 ⅓ cups (20 oz/567 g) milk chocolate, finely chopped
  • 1 ¾ cups (14 oz/395 g) granulated sugar
  • cup (4 oz/115 g) bittersweet chocolate, finely chopped
  • 2 teaspoons baking powder
  • 2 cups (16 floz/480 ml) heavy whipping cream
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ cup (2 floz/60 ml) plus ¾ cup (6 floz/180 ml) buttermilk*, room temperature
  • 1 tablespoon vanilla extract
  • 1 cup (8 oz/225 g) Butter, softened
  • 4 large eggs, at room temperature

  • *Cake flour can be made using my substitute recipe here. Or simply replace it with the same amount of all-purpose/plain flour. Also make your own buttermilk easily here.
