Instructions

  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  2. In a bowl mix the tahini, honey, baking soda and salt until combined.
  3. Add in the all purpose flour and ground walnuts. Stir using a spoon or a spatula until the dough comes together.
  4. Divide the dough into 12 pieces and shape each piece into a ball.
  5. Roll the cookie balls in sesame seeds until they are well coated on all sides. Transfer the cookie balls to the baking sheet and leave about 2 inches between them.
  6. Using a glass with a round bottom, gently press on the cookies to flatten them so they are about 1/4 inch thick. Keep in mind that the cookies won't spread much while baking.
  7. Bake the cookies for 12 minutes, they will be brown around the edges ever so slightly.
  8. Let the tahini cookies cool for 10 minutes before serving.

Notes

  • Make sure you're using quality tahini and honey since these two ingredients give all the flavor to the cookies.
  • If making these cookies gluten free, use almond flour or 1:1 gluten-free flour.
  • For vegan tahini cookies use maple syrup instead of honey.
  • Store the leftovers in an airtight container and keep at room temperature for 3 days or in the fridge for 10 days.
