Coconut bird's nest cookies filled with chocolate eggs make the perfect spring or summer treat!

Ingredients
- 90 candy coated chocolate eggs
- ⅔ cup all-purpose flour
- 5 ½ cups sweetened coconut flakes
- 14 ounces sweetened condensed milk
- 1 teaspoon vanilla extract
- pinch salt
Instructions
- Preheat oven to 350°F.
- Combine flour, coconut and salt in a bowl.
- Add sweetened condensed milk and vanilla. Mix well.
- Divide into 30 pieces. With wet hands, shape each piece into a 2" circle. With your thumb, create an indent in the middle.
- Place on a parchment lined pan and bake 10-12 minutes or until lightly browned.
- Cool 1 minute or so. While the cookies are still soft, press the indent in the middle again (and reshape the cookie slightly if needed). Cool completely on the pan.
- Place 3 chocolate eggs in each cookie.
Notes
- If you'd like to stick the eggs in the cookies, add a little bit of frosting inside each cookie before adding the eggs.
