Birds Nest Cookies

These Birds Nest Cookies are the perfect treat for spring! Chow mein noodles are coated in a blend of butterscotch and chocolate chips, then topped with robin's egg candies. They're so easy to make, and no bake, too!

  • 2 cups chocolate chips
  • 2 cups butterscotch chips
  • 12 ounces dry chow mein noodles
  • Robin's egg candies like Whoppers or Cadbury Mini Egg Candies

Instructions

  1. Prepare a muffin pan with cupcake liners (or use a silicone muffin pan.) Set aside.
  2. Place the milk chocolate chips and butterscotch chips into a large microwavable bowl. Microwave for 30 seconds and stir. Continue to microwave in 30-second intervals until melted. Don’t overheat.
  3. Gently fold in the chow mein noodles. Continue to fold until the noodles are evenly coated.
  4. Use a cookie scoop or large spoon to portion the coated noodles into the prepared muffin pan.
  5. Use a spoon to create a recess in each nest. Add 2 robin’s egg candies to the recess of each nest. The cookies will quick set within about 15 minutes. They will be fully set and dry after 2 hours.

Notes

  • Line your muffin tin with cupcake liners or use a silicone muffin pan. This will make it easier to remove your Birds Nest Cookies once they're fully set.
  • You can swap the butterscotch chips for peanut butter chips. I love using butterscotch chips, though. The flavor is so good, and it makes for a great peanut-allergy friendly option.
  • Chow Mein Noodles come fully cooked and ready to use. They are crunchy and slightly salty, and pair perfectly with the chocolate-butterscotch coating. You can find them in the Asian section of your grocery store.
  • You can use broken pretzel sticks in place of the chow mein noodles. This also makes for a nice gluten-free option!
  • I like to use either Whoppers Candy Eggs or Cadbury Mini Eggs for decorating. Jelly beans are another good option.
  • Store in an airtight container on the counter for up to four days.
