Nothing like a refreshing Blackberry Mojito this summer! I'm going for a Virgin Mojito recipe so you can enjoy as much of it as your heart desires! A hint of lime, ginger, lots of blackberries and mint in an icy cup.

Ingredients
- 2/3 cup blackberries
- 1 tablespoon sugar
- 3 Tablespoons lime juice
- 1/3 cup mint leaves
- 36 ounces ginger ale diet or a combo of ginger ale and lemon soda
Garnishes
- 2 limes sliced
- 4 prigs mint
- 2 -3 cups ice
- 1/2 cup blackberries
Notes
- Blackberries are the star of this Mojito version, so use them generously! They add flavor and texture.
- If you want to substitute blackberries, use blueberries! They make the best swap. Also try using a combo of both!
- Make sure you crush the blackberries well in the mortar and pestle so that it infuses into the soda drink, otherwise you won't be able to taste it.
- To sweeten your mojitos without the simple syrup, use ginger ale or lemon soda. And to make the drinks zero sugar--use diet drinks.
- To make the drink ahead of time, prepare everything except leave the ice as the final step. Add it right before serving!
