Mojito Mocktail (Virgin Mojito Recipe)

Mint Simple Syrup

  • 1 cup water
  • ½ cup honey
  • cup fresh mint leaves , loosely packed

Mojito Mocktail

  • 2 tablespoons Mint Simple Syrup
  • 2 tablespoons fresh lime juice
  • ¾ cup sparkling water (lime-flavored, if desired)
  • cubed ice , as needed

Instructions

Mint Simple Syrup:

  1. In a small saucepan, combine the water, honey, and fresh mint leaves. Bring the liquid to a boil over high heat. Let the mixture boil for 1 minute, stirring often, then turn off the heat. Let it cool for 30 minutes to infuse the mint flavor.
  2. Arrange a fine mesh strainer over a glass storage jar and pour the syrup through the strainer to catch the mint leaves. Press the mint leaves with the back of a spoon to extract as much mint flavor as possible. Then secure a lid on the jar and store it in the fridge for up to 2 weeks.

Mojito Mocktail:

  1. In a 12-ounce glass add the simple syrup, lime juice, and sparkling water. Stir well to mix. Taste the drink and adjust it to your liking. You can add more simple syrup for a sweeter drink, or more lime juice for extra tart flavor. (Using lime-flavored sparkling water helps, too.)
  2. Fill the rest of the glass with ice and garnish with a lime wedge or fresh mint leaves, if desired. Serve right away.
