Boza is a fermented drink made from cereals, popular in Romania, Turkey, Bulgaria, Albania, Serbia, and Kosovo.

Ingredients
- 1 cup 250 ml cereals (bulgur, rice, corn, millet ... according to taste)
- 2 quarts lukewarm water , for soaking
- 7 cups water , for cooking the cereals
- ¾ cup water , for cooking the flour
- 1 cup brown sugar
- 1 teaspoon active dried yeast
- ½ cup all-purpose flour
- ½ cup PLAIN yogurt
- 1 vanilla pod
- cinnamon powder

Instructions
- Soak the cereal in the 2 quarts (2 liters) of lukewarm water overnight.
- The next day, split the vanilla pod in half lengthwise and place it in a non-stick coated pot.
- Cook the cereals in the 7 cups (1.8 l) of water over low to medium heat for 1 hour 45 minutes.
- Once the cereals are cooked, mix the mixture using a hand mixer, having previously removed the vanilla pod.
- Add ¾ cup (150 g) of brown sugar to the mixed cereals and mix well.
- Return the pot to a low heat and stir to dissolve the brown sugar.
- Remove from heat and let cool.
- In a large bowl, dilute the yeast in a little water at 97 F (36°C).
- Then, in a saucepan with a non-stick coating, add the ¾ cup (200 ml) of water and the flour and cook over low heat for 5 minutes.
- Add the remaining ¼ cup (50 g) of brown sugar, mix and remove from the heat.
- Leave to cool and then add the yeast and plain yogurt.
- Mix and let stand for 30 minutes.
- After 30 minutes, add this mixture to the cereals and mix.
- Cover this preparation with a cloth and leave to ferment for 2 days, making sure to stir it from time to time.
- Once the fermentation has taken place, filter the preparation and transfer it to a carafe without a lid and place it in the refrigerator.
- Serve in a mug, sprinkling the top with ground cinnamon.
