Brazilian Corn Chowder

This sweet corn chowder recipe, also known as sopa de milho in Portuguese will blow your mind. It's thick, chunky, full of white sweet potatoes, smoked sausage, and the best part is, you can make it with fresh corn in the summer, and frozen corn during the winter time. It's a great corn soup recipe all year long!

Notes

  • *you can brown the sausage until crispy if you'd like, but all the brown bits that collect at the bottom of the pan will deglaze when you add the stock, and may turn your soup brown, instead of yellow. It's still delicious, just not as pretty! You can always use a separate pan, or use a frying pan to brown the sausage nice and crispy. One more pot to wash, but this will help keep your soup nice and yellow!
