Brown Sugar Cookie Bars
Description
The Brown Sugar Cookie Bars start with melted butter combined with packed brown sugar, which provides moistness and rich, caramel flavor. Lightly beaten egg is incorporated gradually to temper it with the warm sugar. The dry ingredients—flour, baking powder, and cinnamon—are sifted in to achieve an even texture. Vanilla extract is added last to enhance the sweetness.
Baked in a greased 8x8 pan at 350 degrees for 20 minutes, the bars set with edges firm but a slightly gooey interior, especially if allowed to cool a few minutes before cutting. This texture works well for serving as a handheld dessert or snack.
These bars can be lined in foil for easier removal but should still be cooled briefly to set properly before slicing.
Ingredients
- ¼ c butter
- 1 c. brown sugar packed
- 1 egg beaten lightly
- ¾ c all-purpose flour
- 1 t baking powder
- ¼ t cinnamon
- 1 t vanilla extract
Instructions
- preheat oven to 350 degrees
- grease and 8x8 baking pan
- melt butter in a small saucepan
- remove from heat and add brown sugar
- beat egg in small bowl and add a bit of warm sugar to bowl and stir
- add egg mixture to the pan and stir
- sift flour, baking powder and cinnamon together
- add to brown sugar mixture
- stir in vanilla extract
- pour into baking pan
- bake for 20
- allow to cool, then cut into bars
- **if you line the baking pan with foil you should still allow them to cool a few minutes to allow the cookie to set then remove and cut into gooey bars.
