Description

This recipe starts by gently heating milk with black tea bags until it simmers, then steeping for 10 minutes to infuse the tea flavor while keeping the milk from scorching. The tapioca pearls are prepared separately according to package instructions to achieve their signature chewy consistency.

The brown sugar syrup is created by boiling muscovado sugar with water, then simmering the cooked tapioca pearls in this syrup until the mixture thickens, coating the pearls with a dark, caramelized sweetness. This syrup-soaked boba intensifies the drink’s depth and sweetness.

The drink is assembled by layering brown sugar syrup and tapioca pearls at the bottom of a glass, then adding the steeped milk tea and stirring to blend. It can be enjoyed warm or chilled according to preference and provides a comforting fusion of creamy and sweet textures and flavors.

  • 2 cups milk
  • 2 bags black tea

Brown Sugar Boba Pearl Syrup

  • ½ cup tapioca pearls
  • ¼ cup muscovado sugar or dark brown sugar
  • 40 ml water

Instructions

  1. In a small saucepan, over medium-high heat the milk along with the black tea. Careful not to have the temperature too high or you’ll burn your milk. Once the milk has started to simmer, turn off the heat and steep the black tea in the milk for 10 minutes. Feel free to chill the milk afterwards or enjoy it warm.
  2. Prepare your tapioca pearls according to the package.
  3. In a pot, combine the muscovado sugar with 40 ml of water and bring it to a boil. Turn down the heat to a simmer and add in the prepared tapioca pearls. Simmer until the brown sugar syrup has thickened. Simmering the cooked tapioca pearls in the syrup just adds more flavour to them.
  4. Remove from heat once it has thickened.
  5. Assemble your drink by adding half of the brown sugar syrup and tapioca to a glass. Add half of the steeped milk to the glass then stir to combine. Repeat with the second glass.
