Bulgogi is a gui, a Korean-style grilled dish, composed of thin slices of marinated meat, grilled on a Korean barbecue grill.

Ingredients
- 800 g top sirloin beef , thinly sliced
For the marinade
- 5 tablespoons soy sauce
- 1 tablespoon Korean soy sauce , gukganjang
- 3 tablespoons light brown sugar
- 3 teaspoons liquid honey
- 3 tablespoons Jinro Makgeolli (or other rice wine)
- 2 tablespoons sesame oil
- 3 tablespoons chopped garlic
- 1 tablespoon ground black pepper
- 3 teaspoons golden sesame seeds
- 4 tablespoons chopped scallion
- 1 tablespoon pureed kiwi
- 2 tablespoons pureed pear
- 1 tablespoon pureed onion

Instructions
- Prepare the sauce by mixing all the marinade ingredients in a large bowl.
- Thoroughly mix the bulgogi beef with the prepared marinade.
- Cover and marinate for 45 minutes at room temperature.
- Heat the Korean barbecue pan over high heat and simply fry and sauté the meat, in small batches, until lightly browned on both sides.
- The pan must be very hot so that the meat sizzles on contact.
Notes
- Do not put too much meat in the pan and the heat must be high so that the meat does not release too much juice.
- In the absence of a Korean barbecue, it is possible to use a cast iron plate placed on a charcoal grill.
- It is also possible to grill the bulgogi on the top rack of the oven (grill temperature), watching closely so that it does not burn too much.
