Buttered Noodles
Description
This recipe uses mafaldine noodles, though any pasta shape can work. The noodles are boiled in salted water with added chicken bouillon powder, which subtly flavors the pasta while cooking. After draining, a sauce is made in the pasta pot by melting salted butter and mixing in more chicken bouillon powder for richness and umami.
Minced garlic is cooked briefly in the butter for aromatic flavor. Reserved pasta water is added gradually to develop a smooth sauce that clings to the noodles. Parmesan cheese is folded in, melting into the warm pasta for savoriness and creaminess. Freshly cracked black pepper seasons the dish, and parsley garnish brings freshness.
Serve these buttered noodles warm as a comforting side that pairs nicely with various main dishes or as a filling vegetarian main.
