Caesar Salad with Sourdough Croutons

Romaine hearts are drizzled with a cheesy, garlicky Caesar dressing then topped with crunchy, sourdough croutons.

Ingredients

  • 2 hearts of romaine (halved, lengthwise)

Caesar Dressing

  • ¼ cup Parmesan Cheese
  • 1 clove garlic (minced)
  • 1 tablespoon anchovy paste (optional)
  • 1 tablespoon Worcestershire sauce 
  • 1 lemon (juiced)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Sourdough Croutons

  • 2 cups sourdough bread cubes
  • ¼ cup extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • ½ teaspoon cayenne

Instructions

  1. Pre-heat oven to 300 degrees. Toss bread cubes in a bowl with olive oil, salt, garlic powder and cayenne then spread in an even layer on baking sheet. Bake until golden brown and crunchy, about 20 minutes.
  2. Whisk together dressing in a bowl; set aside.
  3. When you're ready to assemble, place romaine hearts on a platter and drizzle with dressing and top with croutons.
