Calamansi Muffins

Calamansi Muffins are tender, moist cakes featuring fresh calamansi zest and juice, accented with a crumbly topping and a tangy calamansi glaze. The batter uses eggs, sugar, vegetable oil, and sour cream to create a rich texture. Baked in paper-lined muffin cups, these muffins develop a sugary crumble that contrasts nicely with the smooth, citrus-infused crumb inside. The final glaze adds a sweet-tart finish, balancing the citrus flavor.

Description

This recipe for Calamansi Muffins highlights the bright, citrus notes of fresh calamansi through both zest and juice incorporated into a rich muffin batter. The base combines beaten eggs, sugar, and vegetable oil, enriched with sour cream to yield a moist texture. The batter is gently mixed with flour to avoid toughening.

Before baking, a crumb topping made from flour, sugar, salt, and melted butter is sprinkled on each muffin, which bakes to a golden, crunchy layer complementing the tender inside. Once baked, a glaze of powdered sugar and calamansi juice is drizzled over, reinforcing the citrus presence with a sweet and tangy coating.

The muffins offer a balance of a slightly crispy topping, soft crumb, and fresh calamansi tang, suitable for breakfast or snack. The glaze can be adjusted in thickness to taste, applying more or less according to preference.

It's important not to overmix the muffin batter to prevent toughness and undesired holes. Stir just until the dry ingredients are moistened, and expect the batter to remain somewhat lumpy.
