Filipino Adobo Chicken

Filipino Adobo Chicken features bone-in, skin-on chicken thighs marinated in soy sauce, white vinegar, garlic, black peppercorns, and bay leaves, then baked covered to tenderize and infuse the savory, tangy flavors. Uncovered baking at the end reduces and glazes the sauce. This preparation highlights a balanced sour and salty profile characteristic of classic Adobo.

Description

Filipino Adobo Chicken is a classic preparation using bone-in, skin-on chicken thighs marinated for several hours in a mix of soy sauce, white vinegar, crushed garlic, black peppercorns, and bay leaves. The marinade imparts bold salty and sour flavors, while bay leaves add aromatic depth.

The chicken is cooked in a covered Dutch oven at 375°F, initially skin side down, allowing the flavors to meld and the meat to become tender during the covered baking phase. Later, uncovering the Dutch oven enables the sauce to reduce and thicken and the chicken to brown, creating a flavorful glaze over the skin.

This dish is typically served with steamed rice, where the vibrant sauce complements the neutral grain. Its straightforward ingredients and method yield a richly seasoned chicken with a perfect balance of tanginess and savory notes common in Filipino cuisine.
