Ingredients
- 2 Tbs vegetable oil
- 2 chicken breasts
- 1 oz taco seasoning same as one packet
Instructions
- Preheat the oven to 350 degrees.
- If the chicken breasts are very thick, cut in half so that each is about ½ inch thickness or pound out to ½ inch thickness.
- Rub the chicken breasts with the oil and use a paper towel to rub some of the oil on a baking sheet.
- Sprinkle each chicken breast with some of the taco seasoning. Add more or less according to your taste. If your two breasts equal 1lb or more, you will need the entire packet of seasoning. Use less if you prefer.
- Bake in the center of the oven at 350 for 20-30 minutes until the internal temp of the chicken reaches 165, juices should run clean and no pick meat is noted.
Notes
- Substitutions
- Taco Seasoning can be slightly salty so you do not want to add salt to the chicken until you taste it at the end and then add the salt seasoning that is needed.
- This seasoning will give your chicken a lovely red hue.
- Serve this chicken with a starch like rice, noodles or potato to ofset any spicy heat.
- Use care when picking out your taco packet as there are different spice levels.
- If your store doesn't have Taco Seasoning, Fajita Seasoning will work too.
- Chicken - If you aren't a fan of chicken, pork, beef or lamb work equally well with this recipe. The cooking times will vary based on the meat you are cooking.
- Oil - Use any oil you prefer, butter, bacon grease or lard.
- Taco Seasoning - Fajita Seasoning also works
