Cheese Thyme Coconut Crackers

Cheese Thyme Coconut Crackers combine coconut flour, sharp cheddar, parmesan, butter, and egg to create a low-carb crispy cracker. Fresh or dried thyme adds an herbal note, while the cheddar on top browns to develop a crunchy, cheesy crust. These bite-sized crackers have a dense yet crisp texture and a rich savory flavor.

Description

This recipe blends coconut flour with melted butter, egg, grated sharp cheddar cheese, and parmesan to form a dough that rests briefly for the flour to absorb moisture. After mixing, the dough is shaped into small balls, pressed flat, and topped with extra cheddar and thyme leaves before baking.

Baking at moderate heat produces crackers with nicely browned edges and a crispy texture. The combination of cheddar and parmesan provides a complex cheesy flavor, while thyme contributes a subtle earthiness that lifts the savory profile. The coconut flour gives the crackers structure and a slight nutty undertone.

These crackers serve well as a low-carb snack or appetizer and can be paired with dips, cheese boards, or enjoyed alone. Their crunchy bite and sharp cheese notes contrast the mild herb flavor effectively.

Notes advise thinner crackers and longer baking for increased crispness. These crackers store well in airtight containers for several days or can be frozen for longer storage, making them practical for make-ahead snacks. Different spices can replace thyme for flavor variations.

Ingredients

Servings
  • 3 tablespoon coconut flour 24g
  • 2 tablespoon butter melted, 28gg
  • ½ cup cheddar cheese 50g, grated, strong
  • ¼ cup parmesan 25g, grated
  • 1 egg
  • thyme to taste, or dried thyme, fresh leaves

Instructions

  1. Pre-heat the oven to 180 Celsius / 350 Fahrenheit electric or 160C / 320F fan.
  2. Mix the coconut flour, melted butter, egg, half of the grated cheddar and the grated parmesan until well combined. You can do this by hand or with an electric mixer / food processor.
  3. Let the mix rest a few minutes so the coconut flour can absorb the moisture.
  4. Form 8 balls and place them on a baking sheet lined with parchment paper.
  5. Press them with your hands into little flat discs and sprinkle the remaining cheddar on top. Top with thyme leaves or dried thyme.
  6. Bake for 12-15 minutes until the edges are nicely browned.

Notes

  • To increase crunchiness, press crackers thinner and bake longer.
  • Store crackers airtight at room temperature up to 4 days or refrigerate up to 7 days.
  • Freeze fully cooled crackers for up to 3 months.
  • Omit thyme or substitute with spices like paprika, cumin, or cayenne to vary the flavor.
