Ingredients
- 1 pound ground beef
- kosher salt and pepper
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour
- 1 ½ cups chicken stock
- 15 ounces tomato sauce
- 2 tablespoons tomato paste
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon smoked paprika
- 12 (4-inch) corn tortillas, cut or torn into pieces
- 1 (7 ounce) can diced green chiles
- 1 cup frozen corn
- 8 ounces Monterey jack cheese freshly grated
- chopped tomatoes for topping
- sliced green onions for topping
- fresh cilantro for topping
Instructions
- Preheat the oven to 375 degrees F.
- Heat a large (12-inch) oven-safe skillet or dutch oven over medium heat and add the ground beef. Season all over with salt and pepper. Cook until browned all over, using a meat chopper or wooden spoon to break the meat into small crumbles. Once browned, transfer the meat to a plate.
- Now make the sauce! Add the olive oil to the same skillet over medium heat. When it’s hot, whisk in the flour and cook until it is golden brown, about 2 minutes. Add the remaining ingredients (stock, tomato sauce, paste and spice) and whisk together, bringing the mixture to a simmer. Add a big pinch of salt and pepper. Reduce the heat to low and cook for 5 more minutes. Taste and add more salt, pepper or spices as needed.
- To the skillet with the sauce, add in half of the tortilla pieces. Add in the ground beef, frozen corn and diced green chiles. Add a sprinkling of the cheese. Use kitchen tongs or a large spoon to mix everything together, making sure it’s all evenly dispersed.
- Top with the remaining tortilla pieces. Add the remaining cheese on top.
- Bake for 20 to 25 minutes, until warm and cheesy and bubble. Remove from the oven and top with tomatoes, cilantro and green onions. Serve!
