Ingredients

  • 3 lb of Yukon or Russet potatoes
  • 1 bay leaf
  • 1/2 Tbsp salt
  • 3 to 5 Tbsp of olive oil for pork onion and garlic
  • 1 lb of pork
  • 1 Tbsp of soy sauce
  • 1 medium onion
  • 3 cloves of garlic
  • 1 cup of heavy whipping cream
  • 1/4 cup of fresh dill
  • 1 Tbsp of Mrs. Dash seasoning
  • 1 cup of grated mozzarella cheese

Instructions

  1. Wash and peel potatoes. Cut them in to big chunks and place them in to a pot with cold water. Add 1 bay leaf and 1/2 Tbsp of salt. Cook for 15 min on medium high heat until they can be pierced with a fork, but are not fully cooked. Drain potatoes and place them in a large bowl.
  2. While potatoes are cooking, cut pork in to small chunks. Add some oil to large skillet and cook pork for 7-10 min. Half way through, add 1 Tbsp of soy sauce and mix well. Once pork starts to brown, remove from heat.
  3. Next, mince 3 cloves of garlic and saute on medium high heat until it starts to brown. Be careful not to burn it. Stir frequently. After garlic is done cooking, remove it to a separate bowl, add more olive oil and saute onion in the same skillet until it is golden brown.
  4. Start preheating oven to 350°F.
  5. In a big mixing bowl, combine cooked potatoes, onion, garlic, 1/4 cup of fresh dill, 1 cup of heavy whipping cream, 1 Tbsp of Mrs. Dash seasoning and gently mix everything together.
  6. Empty mixture into a large rectangular baking dish and top with cooked pork. Cover baking dish with foil and place in to preheated oven for 15 min.
  7. While potatoes are baking, shred 1 cup of mozzarella cheese.
  8. After 15 min are up, take potatoes out of the oven, remove foil, and sprinkle them with mozzarella cheese. Set oven to broil and put the dish back for 2 min to melt the cheese. !You are done, it goes great with canned pickled tomatoes.

Notes

  • Cooking time may vary depending on the size of the potato or pork chunks. I would also recommend prepping most of the ingredients before starting to cook. So wash and dice potatoes, cut pork, dice onion, and mince garlic.
