Cheesy Collard Greens Dip

Ingredients

  • 2 Tbsp butter unsalted
  • 1 collard greens stemmed, roughly chopped, bunch
  • 1/2 onion diced
  • 1 yellow bell pepper diced, small
  • 4 garlic minced, cloves
  • 2 tsp Slap Ya Mama Cajun Seasoning
  • 1 6.5 oz marinated artichoke drained, jar
  • 1/4 c parsley chopped, fresh
  • 1 8 oz cream cheese room temp, package
  • 1/2 c sour cream
  • 1/2 c Parmesan Cheese separated, grated
  • 1/2 c mozzarella cheese shredded

Instructions

  1. Melt the butter in a cast iron, or oven proof skillet over medium heat
  2. Add the onions and cook until transparent, about 2 minutes
  3. Add the bell pepper, and cook until soft, about 2 minutes, stirring occasionally
  4. Add the garlic and cook until fragrant, about 2 minutes, stirring occasionally
  5. Add the greens, and cook until soft, about 2-3 minutes
  6. Season with slap ya mama
  7. Add the artichokes and the parsley, stir
  8. Remove from heat and add the cream cheese, the sour cream and half of the parmesan, stir to combine
  9. Then, top with the remaining parmesan, and the mozzarella
  10. Broil a few minutes, until cheese is golden
