Cheesy Collard Greens Dip

Ingredients
- 2 Tbsp butter unsalted
- 1 collard greens stemmed, roughly chopped, bunch
- 1/2 onion diced
- 1 yellow bell pepper diced, small
- 4 garlic minced, cloves
- 2 tsp Slap Ya Mama Cajun Seasoning
- 1 6.5 oz marinated artichoke drained, jar
- 1/4 c parsley chopped, fresh
- 1 8 oz cream cheese room temp, package
- 1/2 c sour cream
- 1/2 c Parmesan Cheese separated, grated
- 1/2 c mozzarella cheese shredded
Instructions
- Melt the butter in a cast iron, or oven proof skillet over medium heat
- Add the onions and cook until transparent, about 2 minutes
- Add the bell pepper, and cook until soft, about 2 minutes, stirring occasionally
- Add the garlic and cook until fragrant, about 2 minutes, stirring occasionally
- Add the greens, and cook until soft, about 2-3 minutes
- Season with slap ya mama
- Add the artichokes and the parsley, stir
- Remove from heat and add the cream cheese, the sour cream and half of the parmesan, stir to combine
- Then, top with the remaining parmesan, and the mozzarella
- Broil a few minutes, until cheese is golden
