Ingredients

Servings

Potatoes

  • 1 pound russet potato washed, dried, and diced into ½-inch cubes
  • 1 tablespoon vegetable oil
  • 1 tablespoon taco seasoning
  • 1 teaspoon seasoned salt

Cheese Sauce

  • ¾ cup heavy whipping cream 178.5 g
  • 1 ½ cups cheddar cheese shredded, sharp
  • 1 cup pepper jack cheese shredded, 113 g
  • teaspoon kosher salt
  • teaspoon onion powder
  • teaspoon garlic powder
  • teaspoon chili powder

Optional Toppings

  • sour cream
  • green onion chopped
  • jalapeño sliced
  • diced tomatoes

Instructions

  1. To a medium bowl, add diced potatoes, oil, taco seasoning, and seasoned salt. Toss until evenly coated and set aside.
  2. Lightly spray the inside of the air fryer basket with cooking spray. Place the potatoes into the basket in a single layer. Depending on the size of your air fryer, you may have to work in batches. Air fry* at 375°F for 10 minutes. Shake the basket and continue cooking for another 5 minutes or until tender and crispy.
  3. While the potatoes are cooking, make the cheese sauce.

Cheese Sauce

  1. To a medium saucepan over medium heat, add heavy cream. Heat until bubbles start to form around the sides. Reduce heat to low and stir in cheeses and seasonings until the cheese is completely melted. Cover to keep the cheese sauce warm while you air fry the potatoes.
  2. Place potatoes on a platter or plate. Top with cheese sauce, garnish with toppings and serve.

Notes

  • *Oven Instructions
  • Preheat the oven to 425°F and line a baking sheet with parchment paper.
  • Season diced potatoes as instructed.
  • Spread the potatoes on the lined baking sheet in a single layer.
  • Bake for 25-35 minutes, or until the potatoes are fork-tender, flipping halfway through cooking.
