Instructions

  1. Place potatoes and 1 ½ teaspoons of salt in a large pot. Fill the pot with water until the potatoes are covered with water. Turn the heat to high and bring the water and potatoes to a boil. Reduce the temperature to medium, and boil the potatoes for 25 minutes. Potatoes are done when they are tender when pierced with a fork.
  2. Drain the hot water from the potatoes with a colander. Place the potatoes back in the pot and mash up the potatoes with a potato masher.
  3. Put the butter and garlic in the pot with the hot potatoes, stirring well until the butter is melted. Add milk and sour cream, stirring until smooth.
  4. Add the Colby cheese, Monterey Jack cheese, parmesan cheese, ½ teaspoon salt, and pepper to the potatoes. Mix the potatoes until well combined. serve and enjoy.

Notes

  • You can leave the potatoes unpeeled if you prefer, but it will change the texture of the mashed potatoes a little.
  • I usually use a potato mashed, but you can also use a hand mixer right in your cooking pot on low and then medium speed. You can also place the cooked potatoes in a stand mixer on low until smooth.
