Instructions

  1. Preheat oven to 400 degrees F.
  2. In a 12-inch cast iron skillet or large oven safe skillet, heat the oil over medium high heat. Add the onion and poblano pepper and cook until tender, about 5 minutes, stirring occasionally.
  3. Add the garlic and cook for 1 minute.
  4. Add the beans, salsa verde, cilantro, lime juice, cumin, chili powder, salt, and pepper. Stir to combine.
  5. Add the rice and 1/2 cup of shredded cheese. Stir until cheese is melted. Top with remaining 1 cup of cheese.
  6. Carefully transfer the skillet to the oven and bake for 8 to 10 minutes or until cheese is melted. Turn the oven to broil and broil for 2 minutes or until cheese is browned. Watch it closely.
  7. Remove from oven and let sit for 5 minutes. Garnish with cilantro, avocado, and green onions. Serve warm with tortilla chips, if desired.

Notes

  • If you don’t have an oven safe skillet, you can transfer the mixture to a greased baking dish and top with shredded cheese and bake.
