Chewy Lime Sugar Cookies

Chewy Lime Sugar Cookies combine the tangy brightness of lime zest and juice with the subtle crunch of toasted coconut inside a soft, chewy cookie. Rolled in sugar before baking, these cookies offer a lightly crisped outside with a tender center, making them a delightful balance of texture and citrus flavor. They are suited for those seeking a refreshing twist on classic sugar cookies, bringing in a tropical note with the coconut and lime pairing.

Description

The Chewy Lime Sugar Cookies recipe blends softened butter, granulated sugar, fresh lime zest and juice, and toasted coconut to create a soft dough that yields a chewy yet slightly crispy cookie. The dough is rolled in sugar before baking, creating a delicate outer crust that contrasts the moist interior. The inclusion of baking soda and baking powder helps the cookies rise just enough, ensuring a tender crumb. The lime adds a fresh, citrus aroma and taste that balances the sweetness, while the toasted coconut introduces a subtle nuttiness and texture.

These cookies bake quickly at 350 degrees Fahrenheit, finishing with a light golden edge but remaining soft in the middle. Cooling them slightly on the baking sheet before transferring to racks prevents breakage, preserving their chewy texture. Because of their refreshing flavor and tender chewiness, they work well as a unique option for dessert trays or afternoon treats.

The recipe includes a zest of one large lime and lime juice, giving these cookies a distinctly bright flavor without being overwhelming. The toasted coconut is added into the dough rather than as a topping, distributing its flavor evenly throughout. The rolled sugar coating enhances the cookie’s presentation and adds a gentle sparkling finish.

  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup butter softened, unsalted
  • 1 ½ cups granulated sugar
  • 1 egg
  • ½ teaspoon vanilla extract pure
  • lime finely minced, zest of one large
  • 3 tbsp lime juice
  • ½ cup toasted coconut unsweetened
  • ½ cup sugar for rolling cookies

Instructions

  1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
  2. In a small bowl, stir together flour, baking soda, baking powder and salt. Set aside.
  3. Using a mixer, beat together the butter and sugar until smooth and very fluffy.
  4. Beat in egg, vanilla extract, lime juice and lime zest.
  5. Gradually blend in the dry ingredients and toasted coconut.
  6. Roll rounded teaspoonfuls of dough into balls, and roll in sugar. Place on lined cookie sheets about 1 1/2 inches apart.
  7. Bake 8 to 10 minutes in the preheated oven, or until lightly browned.
  8. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Notes

  • Use freshly zested lime for the best citrus flavor.
  • Toasting the coconut beforehand brings out its nutty aroma and enhances taste.
  • Let cookies cool on the sheet for a few minutes to firm up before moving to racks to avoid breakage.
