Share:
Ingredients
- ½ cup butter
- 8 ounces fresh mushrooms sliced
- ½ cup chopped onions
- 1 tsp garlic powder
- ½ teaspoon black pepper
- ½ teaspoon salt
- ½ cup all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup frozen peas
- 1 cup chopped drained pimentos
- 4 cups chopped cooked chicken
- Serve over prepared egg noodles, rice, toast or biscuits
Instructions
- In a large saucepan, melt butter over medium-high heat. Add in mushrooms, onions and cook until they are soft, about 5 minutes.
- Season with garlic powder, black pepper and salt.
- Add in flour and stir until there are no more specks of flour left. Pour in chicken broth and heavy cream and bring to a boil. Reduce heat to low and simmer until sauce is thickened, about 3 minutes.
- Stir in frozen peas, drained pimientos, and cooked chicken and let heat through, 2 to 3 minutes.
- Serve hot over cooked rice, pasta, toast, or biscuits.
Notes
- FRIDGE: Transfer leftovers to an airtight container and allow to cool completely. Then store in refrigerator for up to 3 days.
- FREEZER: Cream based sauces don't freeze super well, but you can try freezing these leftovers if you'd like. Just transfer to an airtight container and freeze for 2-3 months. Allow to thaw before reheating.
- To reheat, place chicken in a saucepan or skillet and warm on the stovetop over medium heat. You may need to add a splash of heavy cream or chicken broth to make the dish saucy again.
- You can also reheat it in the microwave in a microwave safe bowl. We recommend starting with 30 seconds intervals stirring and repeating until warmed through.
