  • 250 g Fettuccine pasta
  • 2 chicken breasts
  • 2 tbsp olive oil
  • salt and black pepper Adjust to taste
  • 50 g butter Unsalted
  • 300 ml double cream
  • 50 g Parmesan Cheese Grated
  • 1 tsp Italian seasoning
  • parsley Fresh for garnish

Instructions

  1. Start by cooking the fettuccine pasta according to the package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Season the chicken breasts with salt and pepper.
  4. Add the chicken breasts to the skillet and cook for about 6-8 minutes on each side, or until they are cooked through and no longer pink in the centre. Remove them from the skillet and let them rest for a few minutes.
  5. In the same skillet, add the unsalted butter and let it melt.
  6. Pour in the double cream and stir well.
  7. Add the grated Parmesan cheese and Italian seasoning, then continue to stir until the sauce thickens slightly.
  8. Add the cooked pasta to the sauce and toss to combine.
  9. Place the cooked fettuccine pasta on serving plates.
  10. Slice the cooked chicken breasts into thin strips.
  11. Arrange the sliced chicken on top of the pasta.
  12. Garnish with fresh parsley and serve immediately!
