A casserole of chicken, mushrooms and spinach swimming in creamy Alfredo sauce and baked with gooey cheese on top!

Ingredients
- 16 ounces cooked chicken chopped
- 1 batch Keto Alfredo Sauce
- 2 cups shredded Mozzarella cheese
- 9 ounces frozen spinach thawed and well drained
- 8 ounces baby bella mushrooms sliced
- ¼ cup chicken broth
- 1 tablespoon olive oil
Instructions
- Preheat oven to 400°F.Prepare the Keto Alfredo Sauce according to the directions, then set it aside to cool slightly while you prepare the other casserole ingredients.
- Add the olive oil and mushrooms to a large skillet. Sauté until they have some good color, then set them aside to cool slightly.
- In a large mixing bowl, add in the mushrooms, chopped chicken, chicken broth, drained spinach, Alfredo sauce and 1 cup of the shredded mozzarella cheese.
- Stir until well combined, then pour into a 9 x 9 casserole baking dish that's been sprayed with olive oil.
- Add the remaining shredded mozzarella cheese over the top. Bake 25 minutes or until the cheese is golden and bubbly. Allow to cool slightly before serving.
