Chicken Caesar Pasta Salad

This easy pasta salad is also a great make-ahead meal. Serve it as a side dish or scale up as a main.

Ingredients
- 8 ounces (226g) uncooked pasta
- 12 ounces (350g) diced cooked chicken
- 1 head romaine lettuce, cut into bite-sized pieces approximately 8 ounces (226g)
- ¾ cup (42g) croutons
- ½ cup (45g) parmesan shreds
- ¾ - 1 cup (180- 240ml) Caesar salad dressing
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente (9-10 minutes). Drain and set aside in your mixing bowl and let cool.
- Add in the cooked chicken or turkey, romaine lettuce, croutons, Parmesan shreds, and caesar dressing. Mix until coated with the dressing.
- Serve immediately or cover and refrigerate until ready to serve.
Notes
- Add in extras – this is such a versatile recipe. Add in extras like tomatoes, roasted peppers, grilled corn on the cob kernels, sliced red onions, capers, and more.
- Vary the protein - Chicken, turkey, shrimp and crispy air fryer bacon all work here. Feel free to use instant pot chicken breast or other leftovers.
- Vary the pasta - You can use whole wheat pasta or gluten free pasta. Not all gluten free pasta works well in cold pasta dishes, so you may have to try it out a few times to get the right brand.
- Need a smaller serving? - Simply halve all the ingredients and you are good to go.
