This easy and delicious Chicken Caprese combines tender cutlets, juicy tomatoes, and melted mozzarella cheese.

Ingredients
- 3 chicken breasts
- 6 Campari tomatoes
- 1 ½ cups mozzarella cheese sliced or shredded
- ⅓ cup fresh basil leaves
- 1 tablespoon butter
- 1 tablespoon olive oil
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 1 teaspoon garlic salt
- ¼ teaspoon ground black pepper
- Optional: drizzle of balsamic reduction
Instructions
- Slice each chicken breast in half, making 6 pieces in total. Using a meat tenderizer, slightly flatten them out, making sure they are level and even.
- Sprinkle both sides with the garlic salt, pepper, dried basil and dried oregano.
- Heat a large oven-safe skillet to medium. Add in the olive oil and the chicken. Sauté for a few minutes on both sides until they are cooked through.
- Add the mozzarella cheese over the top of each piece of chicken.
- Place the skillet under the broiler for 5-7 minutes or until the cheese has melted, then remove from the oven.
- Add slices of the tomatoes over the top, with fresh basil leaves alternating between each slice.
- Top with a drizzle of the (optional) balsamic reduction. I also like to add some flaked sea salt, oregano and ground black pepper over the top right before serving.
