  • 2 cups chicken shredded
  • 8 ounces cream cheese softened
  • 10 oz enchilada sauce canned, red
  • 2 tablespoons taco seasoning
  • 15 oz black beans drained and rinsed, canned
  • 1 cup corn frozen
  • 8 ounces green chiles 2-4oz cans, canned diced
  • 2 cups Mexican cheese shredded
  • cilantro
  • tortilla chips

Instructions

  1. Preheat oven to 350 degrees F and lightly grease a 8x8 inch or 2 quart casserole dish.
  2. Beat cream cheese, enchilada sauce, and taco seasoning together until smooth. Fold in the shredded chicken, black beans, corn, green chilies, and 1 cup cheese.
  3. Spread dip into the dish. Sprinkle top with remaining cheese and bake for 25-30 minutes until bubbly. Sprinkle with cilantro and serve with chips.
