Chicken Kofta Recipe

Ingredients
- 1 lice sandwich bread
- 1.5 lbs. ground chicken
- 1/2 cup yellow onion grated
- 1 clove garlic minced
- 1/2 cup fresh parsley chopped
- 1.5 Tbsp fresh mint chopped
- 1 tsp allspice
- 1 tsp red pepper flakes
- 1 tsp ground coriander
- 1/2 tsp paprika
- salt and pepper to taste
- 1 egg
- olive oil
Instructions
- Toast the bread until golden brown then place it in a bowl and cover it with water. Then squeeze the bread to wring out the water. This will cause the bread to fall apart into smaller pieces.
- Place the bread into a large mixing bowl and add in the ground chicken, onion, garlic, parsley, mint, spices, a dash of salt and pepper, the egg, and a drizzle of olive oil. Using clean hands, combine all the ingredients together in the bowl.
- Next, wet your hands and shape the chicken mixture into 8 oval patties that are about 1 inch thick. The mixture will be a little sticky. Place the patties onto a tray and refrigerate while the grill is heating up.
- Heat your gas grill or grill pan to medium high heat. Once hot, place the patties on the grill and grill each side for 5 minutes or until the internal temperature reaches 165 degrees Fahrenheit.
- Remove from the grill and serve alongside your favorite Mediterranean sides and sauces and enjoy!

- You can store this chicken koftas in an airtight container in your refrigerator for 3-4 days. You can also freeze them in an airtight container for up to 2 months.
- To reheat, you can either microwave or reheat on the stovetop over medium heat until everything has warmed through.
