- 8 chicken legs, about 2 pounds
- 2 tablespoons extra virgin olive oil
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon dried parsley
- ½ teaspoon kosher salt
- ½ teaspoon ground pepper
Instructions
- Preheat the oven to 425°F.* Line a baking sheet with aluminum foil and spray with nonstick cooking spray.
- In a large bowl, mix together the oil, paprika, garlic powder, onion powder, parsley, salt, and pepper.
- Pat the chicken dry with paper towels. Then, toss the chicken legs into the bowl to coat them with the oil and seasonings mixture.
- Arrange the chicken legs in a single layer on the lined baking sheet**, leaving some space between each. (**Optional, place chicken legs on an oven-safe wire rack on the baking sheet.)
- Bake for about 40-45 minutes, or until the chicken legs are cooked through and the skin is crispy and golden brown. Chicken is fully cooked when it reaches an internal temperature of 165°F.
- Once cooked, remove the chicken legs from the oven and let them rest for a few minutes before serving.
