Chicken Satay

Ingredients

  • 1 cup coconut milk
  • ½ teaspoon ginger grated
  • 2 garlic cloves
  • 1 teaspoon honey clear
  • 1 tablespoon soy sauce
  • lime zest and juice from 1 lime
  • 2 teaspoon curry powder mild
  • 3 tablespoon peanut butter smooth
  • chicken breasts skinless
  • 1 teaspoon vegetable oil

Instructions

  1. Place the coconut milk, ginger, garlic, honey, soy sauce, lime zest and juice, curry powder and peanut butter into the small bowl of a food processor and whizz until well combined.
  2. Cut each chicken breast into 4 strips.
  3. Add the chicken into a bowl and pour over the satay mixture.
  4. Cover the bowl and marinate in the fridge for at least 2 hours.
  5. Place 12 skewers in a sink of cold water.
  6. When you are ready to cook the chicken thread it onto the skewers.
  7. Heat a large non-stick frying pan over medium heat.
  8. Add the oil and cook the skewers, in batches, for ⅔ minutes each side or until cooked through.
