Chilis Southwest Chicken Soup Recipe

Ingredients

  • 1 pound boneless skinless chicken breast
  • salt to taste
  • 2 teaspoons minced garlic 
  • 1 cup chopped white onion
  • 1/2 cup chopped celery
  • 2 tablespoons vegetable oil
  • 1 tablespoon tomato paste
  • 4 cups chicken stock
  • 1 teaspoon chipotle peppers in adobo sauce
  • 1/2 cup white hominy
  • 3 ounces diced green chilies
  • 1 cup diced tomatoes
  • 1 teaspoon lime juice
  • 1 tablespoon chopped cilantro
  • fried corn tortilla strips or corn chips
  • Grated cheese for garnish optional

Instructions

  1. Add 1 tablespoon of vegetable oil in a large pot. Season the chicken breast with salt. Cook the chicken breast over medium heat for about 6 to 7 minutes on each side until fully cooked. Remove the chicken from the pot and set aside until cool. When cool enough to handle, shred the chicken.
  2. Add the remaining vegetable oil in the same pot and saute the garlic and onion until the onion is translucent. Add the celery and cook for an additional 2 to 3 minutes.
  3. Add the tomato paste and stir well. Saute for about 1 minute stirring constantly, and then add the chicken stock.
  4. Add the chipotle peppers, hominy, green chilis, diced tomatoes, and shredded chicken. Cook until the soup has heated through.
  5. Add a squeeze of lime juice and the chopped cilantro.
  6. Top each serving with fried tortilla strips or corn chips, shredded cheese, and sour cream if desired.
