                                Ingredients
- 1.5 pounds Chinese red spinach amaranth (Yin Choy)
 - 6 cloves garlic
 - 1 tablespoon vegetable oil
 - 4 cups water
 - ¼ teaspoon salt (Add salt to your taste)
 
Instructions
- Peel and wash 6 cloves of garlic. Then, pour 1 tablespoon of vegetable oil into a pot. Put the garlic and stir fry until it turns golden brown.
 - After that, put the washed yin choy red Chinese spinach into the pot. Pour 4 cups of water. Then, cover the lid for 2-3 minutes.
 - Next, open the lid and flip the yin choy on the other side and cover another 2-3 minutes. Or until it’s soft. Then, add ¼ teaspoon of salt and stir it well. (Remember to add salt to your taste.)
 
Notes
- Most of the yin choy comes with the roots when I bought them in Asia. However, in most of the Asian markets in the states, when you buy yin choy, the roots are removed. Therefore, if the yin choy has roots, remove them. Also, remove some hard and old stems.
 - Soak the yin choy in water for 15 minutes. Then, wash it 2-3 times to remove mud or sand.
 - Stir fry garlic until it’s golden brown, put the yin choy. Cover the lid for 2-3 minutes, flip the other side and cover another 2-3 minutes. Or until it’s soft. Then, add salt and stir it well.
 - Personally, I like yin choy soft and with some liquid like soup. (Remember to add salt to your taste.)
