Chocolate Bourbon Pecan Bars

Chocolate Bourbon Pecan Bars are a fun twist on Karo’s original Pecan Pie Bars. They’re the perfect bar dessert for the holidays!

Ingredients

For the Crust:

  • 2-1/2 cups all-purpose flour
  • 1 cup butter cut into pieces, unsalted
  • ½ cup powdered sugar
  • ¼ teaspoon salt

For the Filling:

  • 4 egg large
  • 1-1/2 cups corn syrup Karo® brand, light or dark
  • 1-1/2 cups granulated sugar
  • 1 teaspoon ground cinnamon
  • 3 tablespoons butter melted, unsalted
  • 1-1/2 teaspoons vanilla extract pure
  • 2 tablespoons bourbon
  • 2-1/2 cups pecans coarsely chopped
  • 1-1/2 cups dark chocolate chips

Instructions

  1. For the CRUST: Preheat oven to 350°F. Mix flour, butter, powdered sugar and salt with an electric mixer until mixture resembles coarse crumbs. Press firmly and evenly into a greased 15 x 10 x 1-inch pan OR a 17 x 12 x 1-inch pan.
  2. Bake 20 minutes, or until golden brown.
  3. For the FILLING: Beat eggs, corn syrup, sugar, cinnamon, butter, vanilla and bourbon in a large bowl until well blended. Stir in pecans and chocolate chips.
  4. Pour over hot crust; spread evenly.
  5. Bake 25 minutes at 350°F until filling is firm around the edges and slightly firm in center. Cool completely on wire rack before serving.

Notes

  • If you are not a fan of bourbon, or don't have any on hand, you can simply omit it from the recipe.
