Ingredients

  • 6 cups Rice Krispies cereal
  • ¼ cup salted butter
  • 5 cups marshmallows
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 8 oz chocolate melted (dark, milk, or white chocolate)
  • 1 teaspoon vegetable oil or coconut oil

Instructions

  1. Grease a 9 x 9 inch square baking pan with butter or cooking spray. Set aside.
  2. In a large saucepan, melt the butter over low heat. Add the marshmallows and stir until completely melted and well combined. Remove the saucepan from heat and stir in the vanilla extract.
  3. Add the Rice Krispies cereal with a spatula to the marshmallow mixture and gently fold until the cereal is evenly coated.
  4. Transfer the mixture into the prepared 9 x 9-inch pan. Use a buttered spatula or parchment paper to evenly press the mixture into the pan.
  5. Allow the Rice Krispie mixture to cool and set in the pan for about 30 minutes.
  6. Once the mixture is completely cooled and set, use a sharp knife to cut it into squares or rectangles.
  7. In a microwave-safe bowl or using a double boiler, melt the chocolate until smooth, in 15 second intervals, stirring in between each. Add a teaspoon of oil to chocolate if needed to to thin it out and stir in until smooth.
  8. Prepare parchment lined baking sheet.
  9. Insert a popsicle stick into cooled Rice Krispie Square, if desired, otherwise you can use your hands and dip the top or side of each square into the melted chocolate.
  10. Dip each Rice Krispie treat into the melted chocolate, coating the top 1 inch evenly. Allow any excess chocolate to drip off.
  11. Immediately sprinkle with your favorite toppings, such as colorful sprinkles or chopped nuts, before the chocolate sets. You can also drizzle with white chocolate for contrast.
  12. Place them on the parchment paper lined pan to set, which usually takes a few minutes at room temperature or quicker if you refrigerate or freeze them briefly.
  13. Once the chocolate is fully set, serve and enjoy!

Notes

  • Fresh Ingredients. Use fresh marshmallows and cereal for best results. Since we aren't cooking these any staleness in the ingredients may alter the flavor.
  • Dipping Your Treats. Make sure they are at room temperature before dipping to prevent the chocolate from cracking.
  • Cutting the Squares. Use a sharp knife greased with butter or sprayed with cooking spray when cutting to ensure clean edges.
  • Melting the Chocolate. It's important to melt the chocolate slowly in the microwave in 15-second increments. Stir after each one in order to prevent the chocolate from burning.
  • Grease Your Hands or Utensils. It's easier to press the mixture into the pan if you grease your hands with butter or cooking spray since the mixture is very sticky. You can also use a grease spatula or a piece of parchment for pressing.
  • Allow Them Time to Set. Give the treats time to set up before you cut and dip them. This way they will hold their shape. They also need to set again after dipping in the chocolate.
  • Use a Pan Lined with Parchment. Set it up before begin to dip treats so you have a place to put your treats after dipping them in chocolate. The parchment makes them easier to remove once the chocolate sets.
