Ingredients
- ¾ cup flour
- ½ tsp baking soda
- ¼ tsp salt
- ¼ cup butter softened (1/2 stick)
- ¼ cup white sugar
- ¼ cup brown sugar
- ¼ cup peanut butter
- 1 egg
- ¼ tsp vanilla extract
- 20 peanut butter cups unwrapped, miniatures
Instructions
- Preheat the oven to 375 degrees.
- Combine the flour, baking soda, and salt together in a bowl; set aside.
- In another bowl, cream together the butter, white sugar, brown sugar, and peanut butter together until creamy.
- Add the egg and vanilla and beat until well combined.
- Add the flour mixture to the butter mixture and stir until combined.
- Cover and place into the refrigerator for 30 minutes, or until the dough is hardened and easier to handle.
- Coat 2 mini muffin tins with cooking spray.
- Shape dough into 20 same-sized balls and place one in each muffin cup. Don't flatten!
- Place into the oven and bake for 8-10 minutes, or until puffed up and lightly browned.
- While they are baking, remove the wrappers from the miniature peanut butter cups.
- Remove from the oven and immediately press the peanut butter cups in the center of each cookie. Cool completely in the muffin pan. Enjoy!
