Chocolate Peanut Butter Kit Kat Crunch Bars

Chocolate Peanut Butter Kit Kat Crunch Bars feature a peanut butter and cereal base topped with a chocolate-peanut butter mixture layered with Kit Kat pieces and more cereal. The bars combine creamy peanut butter, crispy Rice Krispies, and the crunch of chocolate-coated Kit Kat pieces, delivering a mix of textures and flavors. Heating the peanut butter with sugars and corn syrup forms a sticky base, while the chocolate topping adds richness and crunch.

Description

The base layer is made by heating creamy peanut butter together with light corn syrup, granulated and brown sugars, then mixing in Rice Krispies cereal before pressing into a foil-lined pan. This creates a sticky, crunchy foundation. The chocolate topping is prepared by heating semi-sweet chocolate chips with peanut butter until smooth and then folding in additional Rice Krispies cereal and diced Kit Kat bars. This mixture is spread evenly over the base and packed down before chilling to set.

The resulting bars offer a chewy, crunchy base layered with a smooth, chocolatey peanut butter topping featuring crisp Kit Kat pieces, providing varied texture and flavor contrasts in each bite. These bars are suitable for snacking or dessert and combine familiar candy and cereal flavors in a homemade confection.

Ingredients

Servings

Base

  • 1 peanut butter use Jif, Skippy, or similar; do not use natural or homemade peanut butter, creamy, heaping cup
  • ½ cup light corn syrup light-colored, not lite
  • ½ cup granulated sugar
  • ¼ cup light brown sugar packed
  • 1 tablespoon vanilla extract
  • 3 cups Rice Krispies cereal

Chocolate Topping

  • 1 Kit Kat pieces I used three 1.50-ounce bars, diced, heaping cup, diced
  • 1 cup chocolate chips semi-sweet
  • ¼ cup peanut butter use Jif, Skippy, or similar; do not use natural or homemade peanut butter, creamy
  • 1 cup Rice Krispies cereal or similar crispy rice cereal that’s vegan/GF, if necessary

Instructions

  1. Base – Line an 8-inch square pan with aluminum foil leaving overhang, spray with cooking spray; set aside.
  2. In a large microwave-safe bowl, combine peanut butter, corn syrup, sugars, and heat on high power for 1 minute to melt.
  3. Stop to stir. Mixture will be on the granular side, this is okay.
  4. Return bowl to microwave and heat for 1 more minute on high power.
  5. Stir in the vanilla.
  6. Stir in 3 cups cereal.
  7. Turn mixture out into prepared pan, packing it down somewhat firmly with a spatula and smoothing the top; set pan aside.
  8. Chocolate Topping – Dice the Kit Kats; set aside.
  9. In a medium microwave-safe bowl, combine chocolate chips, peanut butter, and heat on high power for 1 minute to melt.
  10. Stop to stir. Chips may not be completely melted. Return bowl to microwave and heat in 15-second bursts until chocolate can be stirred smooth, 15 seconds is likely all they’ll need.
  11. Stir in 1 cup cereal.
  12. Pour chocolate mixture over base, packing it down somewhat firmly with a spatula and smoothing the top.
  13. Place the Kit Kats in about 10 evenly and tightly spaced rows over the surface, with about 1/4-inch space between each piece (does not have to be perfect). By the time you get all the pieces on and in rows, the pieces you placed on first will likely have started to melt at the base. Push them down lightly so they embed into the chocolate-crispy layer. Go back over and push on all the pieces with your finger to ensure they’re all embedded and will stick as the bars cool and set up.
  14. Cover pan with a sheet of foil (to prevent fridge smells), and place pan in fridge to set up for at least 2 to 3 hours, or overnight, or until chocolate layer is completely set before lifting out with foil overhang, slicing, and serving.
  15. Bars will keep airtight at room temperature for up to 1 week, in the refrigerator for up to 2 weeks, or in the freezer for up to 6 months.
