Chocolate Pound Cake

Pound cake might be the densest, tastiest, and most filling cake you bake at home. With the addition of a little bit of chocolate and coffee, however, it can become even tastier!

Ingredients

Servings
  • 1/4 cup boiling water
  • 2.5 teaspoon instant coffee granules
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cups butter (room temperature)
  • 2 1/2 cups granulated sugar
  • 1/4 cup brown sugar
  • 5 eggs
  • 2 teaspoons vanilla extract
  • 1 cup whole milk
  • 3/4 cup cocoa powder

Topping

  • 1/8 cup powdered sugar (to dust the top of the cake when done)

Instructions

  1. Preheat oven to 325° Grease and flour a round bundt pan.
  2. In a small bowl, pour the boiling water over the coffee granules. Set aside until cooled, then mix into the milk .
  3. In a medium bowl mix the flour, baking powder,and salt with a whisk until combined. Set aside.
  4. In a large bowl with an electric mixer add the room temperature butter, granulated sugar, brown sugar, and beat until fluffy - about 4 minutes.
  5. Turn the mixer to medium and add in the eggs, vanilla, and cocoa just until mixed.
  6. Turn the mixer to low and beat in the flour mixture (in fourths) alternating with the whole milk mixture (in thirds), so beginning and ending with the flour mixture. Scraping the sides of the bowl to ensure even mixing. Do not over mix.
  7. Pour into your prepared bundt pan.
  8. Bake for 60-70 minutes, until a toothpick in the center comes out clean.
  9. Cool in the pan on a wire rack for 15-20 minutes. Transfer from the pan to the rack and cool completely.
  10. Sprinkle lightly with confectioners sugar.

Notes

  • You can also add a Chocolate Ganache on top of this for that little bit extra!
