Ingredients

  • 2 1/2 tbsp oat flour
  • 2 tbsp whey protein powder Lean Body For Her Chocolate flavor
  • 1/2 tbsp Dutch cocoa powder
  • 1/2 tbsp mini chocolate chips Enjoy Life brand
  • 1/4 tsp baking powder
  • 3 tbsp applesauce unsweetened
  • 1 egg white
  • 1/4 tsp vanilla extract

Coconut Cream Frosting

  • 2 tbsp coconut milk solids (see notes for details)
  • 1/2 coop collagen peptides ~5 grams, Sports Research brand
  • 45 mg Stevia Sweetener pure

Instructions

  1. Mix all mug cake ingredients, then pour into a large mug that has been sprayed with non-stick cooking spray.  Microwave for 2 minutes and 15 seconds.  Your cooking time may vary slightly with the power of your microwave.
  2. Mix coconut milk solids, collagen, and Stevia until smooth.  Serve on top of a slightly cooled mug cake.

Notes

  • To get the coconut milk solids, refrigerate a can of Thai Kitchen full-fat coconut milk overnight.  Flip the can upside down and open it from the bottom, then pour off the liquid.  You'll be left with coconut milk solids.
