Ingredients
- 220 g cookies ~8 oz, plain (such as Oro Saiwaor digestive biscuits or vanilla tea biscuits)
- 50 g cocoa powder ½ cup, unsweetened
- 100 g chocolate 3.5 oz, dark 70% cocoa
- 60 g granulated sugar ~⅓ cup of
- 100 g butter ~1 stick, unsalted and at room temperature
- 50 ml milk 3 ⅓ tablespoons
- 40 g pistachios ~1 ½ oz
- 30 ml rum 2 tablespoons, or Brandy or Marsala wine (optional)
- powdered sugar for decoration
Instructions
- Melt the chocolate and butter in a double boiler, stirring occasionally with a spoon.
- In a bowl, crumble the cookies with your hands. Alternatively, you can put them in a food bag and crumble them with a rolling pin.
- Add the bitter cocoa powder and the peeled pistachios (either sweet or salted, it will taste great either way). Finally, add the sugar and mix all the ingredients together.
- Add the melted chocolate, the butter, the milk and the liqueur (optional) and mix.
- Transfer the mixture to a work surface covered with a sheet of baking paper and use your hands to form a sausage. As you form the cylinder, squeeze it well and compact it again.
- Wrap the "sausage" in parchment paper, pressing the ends together. Then wrap it in aluminum foil and let it rest in the refrigerator for at least 4 hours.
- After cooling, remove the cake from the paper and roll the chocolate salami in powdered sugar.
- Serve the eggless chocolate salami cut into slices.
