Ingredients
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 1/4 teaspoons baking soda
- 1/4 teaspoon salt
- 2 large eggs
- 1/2 cup vegetable oil
- 1/2 cup brown sugar packed
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups shredded zucchini packed
- 3/4 cup semisweet chocolate chips
Instructions
- Preheat the oven to 350°F.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a large bowl, whisk together eggs, oil, brown sugar, granulated sugar, and vanilla extract until smooth.
- Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the shredded zucchini and chocolate chips.
- Grease a 9x5-inch loaf pan with cooking spray.
- Pour the batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
